The first unique natto dish I recommend is coffee natto.

This combination is a real treat and has more of a dessert feel to it.

I tried a few pairings with flavors that went surprisingly well together, and they left me wanting to eat more.

Here's how to make your very own coffee natto.


Pairing #1:  Cream Cheese Coffee Natto

How to make:

  1. Take out a piece of cream cheese and place it on a plate/dish.
  2. Top the cream cheese with a scoop of coffee natto.
  3. Top the coffee natto with honey.
  4. Take out a fork and enjoy!


The coffee natto has a nice subtle flavor without the usual fermented smell that accompanies these sticky, stringy beans.

These beans go well with the cream cheese, and the honey helps to add a sweet finish to each bite.

Try out this simple recipe to see whether or not your palate likes it as much as mine did.

The second unique natto dish I recommend is natto fried tofu (natto abura-age).

This combination can be made in just a few simple steps and the umami of this dish really shines on the palate.

Let's make it!



How to Make Natto Fried Tofu - Step One

  1. Boil a pot of water.
  2. Add abura-age (fried tofu) to the boiling water.
  3. Boil the abura-age for 30 seconds and then remove from the boiling water.
  4. Gently remove any excess water using a cooking/paper towel.



How to Make Natto Fried Tofu - Step Two

  1. Put 80 - 100g (approx. 2 packages) of natto into a bowl.
  2. Chop 3cm of a spring onion (i.e. Japanese leek) and add it to the bowl.
  3. Add 1 teaspoon of miso paste to the bowl.
  4. Add 1/2 - 1 teaspoon of a spice of your liking to the bowl.
  5. Mix everything together in the bowl.

*The spice I used (found in the picture above) contained fired onion, sesame seeds, garlic, ginger, as well as other ingredients.



How to Make Natto Fried Tofu - Step Three

  1. Cut the abura-age in half (from top to bottom).
  2. Open the fried tofu and add some natto mixture and shredded cheese.
  3. Place the stuffed fried tofu inside the toaster oven.
  4. Cook the abura-age filled with natto and cheese at 250˚C (482˚F) for 10 minutes.

* (Keep an eye on the fried tofu) When the edges of the fried tofu are crispy and light brown and the cheese has melted, it's ready to be taken out of the toaster oven.



How to Make Natto Fried Tofu - Step Four

  1. Take out the toasted fried tofu filled with natto and cheese from the toaster oven.
  2. Place it on a plate.
  3. Top everything with a splash of shoyu.
  4. Sprinkle some katsuo-bushi over everything.
  5. Enjoy some natto fried tofu goodness!

The third combination I recommend is roasted green tea natto (hojicha natto).

These sticky, stringy beans have a subtle hojicha smell with a faint fermented soybean scent.

This is a good option if you're put off by the typical pungent natto odor.

The beans have a light taste, and they go well with additional toppings.

Here are three ideas for you to try out on your palate.



Idea #1:  Hojicha Natto with Shoyu

How to prepare:

  1. Scoop some hojicha natto into a bowl/dish.

The fourth unique combination is Turkish-style ice cream.

When someone told me natto could make ice cream creamy and stretchy I was shocked.

I knew I had to try and make it because I just couldn't believe what I had heard.

This combination is fun to make and it definitely gives you a different way to enjoy your fermented soybeans.

How to Make Turkish-style Ice Cream

Variation #1:

  1. Mix your natto until a frothy/foamy stickiness is created
  2. Use a little soy sauce when mixing to help create the frothy/foamy stickiness
  3. Add a scoop of vanilla ice cream to a chilled bowl
  4. Keep the bowl chilled while you're making your Turkish-style ice cream
  5. Add some of the frothy/foamy stickiness to the ice cream and mix (I mixed my natto with a spoon and then used the same spoon to mix the ice cream)
  6. Keep mixing until a creaminess and stretchiness is created
  7. (Optional): Add a splash of soy sauce to the ice cream and mix


Variation #2:

  1. Repeat the above steps in Variation #1
  2. Using a second spoon, add some natto to the ice cream and mix


Try both ways to see which suits your tastes best.
